Mark had his 5th Treatment last Tuesday … as you may have noted, he was still sleeping when I put the party up late on Wednesday.  Shortly after I hit ‘publish’ he walked in the office … and scared the snot out of me!  His tshirt was 80% red … apparently at some point, he must have been fidgeting (imagine that?) and one of the connections on tube/line came undone and instead of the chemo pumping IN, the blood was pumping OUT (and yes, I believe the chemo was dripping out as well. We had to call the on-call nurse who came out a few hours later to make sure all was well after Mark put it back together. I think he was a little freaked out and just plugged himself back together without thinking twice!

Easy Clam Chowder

A few years ago, my sister in law shared this recipe with us while we were visiting Indiana … and Mark was like WOW and all over it.

Three of the main reasons we like this:

1 – no chunky tomatoes … Mark, the master chef, will NOT eat cooked chunky tomatoes. It’s either New England Clam Chowder or nothing at all

2 – everything is pretty much from the pantry which is kind of cool to have on hand for a last minute soup

3 – it’s fast and easy to make!

New England Clam Chowder is creamy. Manhattan is red and chunky. A no no for Mark. Especially now.

Just for the record, I do NOT like clam chowder, normally, AND I don’t normally like things that are highly processed (aka, canned stuff) but hey, it’s tasty, it’s a once in while soup and NOW it’s something that Mark can eat and tolerate so I’m all over it!

It is a little indulgent so for the average bear, I wouldn’t make this DAILY but once every few weeks would be deemed acceptable 😉  Here’s what you need!

1 pound of bacon, cooked and crumbled. Save a LOT of the bacon grease in the skillet when done

2 medium onions, chopped

4 cans of baby clams

5 cans of diced potatoes, drained

3 cans of cream of celery soup

2 cups half and half

2 cups milk

2 tsp dry dill

Make you life easier and toss that cooked bacon in a food processor, give a quick whirl and Ta Da! Chopped Bacon! 

Cook your onion in that skillet with some leftover bacon grease. Go ahead, it’s ok! Cook until soft and translucent. Add the juice from the canned clams. Set the clams aside for now.

Add the potatoes to the pan and cook until they are tender, about 15 to 20 minutes.

Add the balance of the ingredients EXCEPT the clams. Stir and allow to simmer for about 45 minutes or until thick.

Add your clams in at end here, stir and let cook for a few minutes until they are warmed through. Don’t let them cook too long as they will become chewier and well, we know that super chewy clams are no good.

Dish up and top with some bacon bits and a little fresh parsley if you have. Enjoy!

This makes a LOT and can feed 12 with a few leftover servings. We’ve frozen this in the past and it has re-heated just fine!

Normally I would love to share three recent links that caught my eye … however, we are currently in Houston at MD Anderson getting the 2nd opinion for Mark’s cancer.  It appears they agree with the original plan so we are not overly happy about this, but will tough it out the rest of the week to see if anything else comes up with the additional tests that are being done. The great news is that chubby baby will be at my house when we get back on Saturday night (he’s 4 weeks older than this pic!)

Happy Valentine’s Day everyone! I’m curious how many of you will be doing something special today, mid-week, to celebrate?

We won’t be … and tomorrow you will find out why when you come back to check out this awesome Potato & Cauliflower Soup I made over the weekend. The soup is great, the news, not so much.

Again, we had some awesome shares last week! Suzi at Just Simple Somethings shared her trip to Mackinac Island, Michigan … being a midwestern girl who has never crossed the bridge, I feel like I need to go now!

Then we had Sarah at Cook With Sara sharing how to make a Creme Brulee Cheesecake  in the Instant Pot! Uh, hello … I think I might need to give this a try!

And what about those 3 Workout Tips That Produce Results from Chris and Megan? Chris shares a lot of great tips and his preferred workout routine … I’ve bookmarked this to give a try with Mark in the near future!

Grocery Spending & Budgeting Week 2

I guess it helps the budget when you are really busy and just don’t have time to shop!

We listed some stuff up on Craigslist, Letgo and OfferUp … oh, and also Facebook Marketplace as we need to get rid of some furniture for the staging of the house … dang, that was really annoying.

Has anyone had good luck with these apps? I will say, OfferUp gave me more action but I think a lot of the people were bogus. And come on, if I’m asking $200 for something, don’t say you’ll take it for $50. It’s not like I want to make any money on this but I certainly didn’t want to give it away for FREE. If I did, I’d be donating it (which sadly, the pick up for any of those was 2 weeks out).

At the end of the day, we sold the dining room set, the guest bedroom set, Randi’s bedroom set, Randi’s desk and chair and what the kids coined “The Heidious Chair”

I don’t care what they said, it was a very comfortable chair and some dude is probably chilling in it with a can of Bud Light right this very moment.

Back to the purpose of this post. We took the kids (Jamie and Amanda) to Sweet Tomatoes on Wednesday for one last dinner before she heads North to her new job. That was my $50 misc. money out the door. Then I hit up McDonalds on my way to work on Friday morning and that was $6 from my grocery money. Then Hubby and I ended up going to Ocean’s Grille Friday night as we were hot, sweaty and starving after moving the one bedroom set and chair. $65 there from my grocery money. Hmmm….that left somewhere around $24.

I kept asking Hubby if we could go to the storage unit to drop some boxes off AND stop at Aldi on the way back … sure … but we never got around to it.

So?  I didn’t go grocery shop at all this past week but still spent that money on food and convenience.

I am ahead again this week but don’t worry, I did make a quick run to Aldi on Sunday morning which was a good thing! Check back next week!

*We’ve got lots of stuff going on around the house this week so things are going to be a little sporadic and potentially way out of character for us … staging of the house, Mark needs to get a last minute testing procedure done (which is freaking me out just a tad) and then of course, work stuff for me!

Simple Whole30 Chili

Happy New Year! Seems that a lot of folks out there are doing a January Whole30 so I thought this would be a perfect time to share this simple Whole30 Chili … not to mention, the majority of the United States is freezing cold! Even here is South Florida, temperatures are finally cooled down as well and we are anticipating some much cooler weather the week ahead.

As I’m over on the West coast of Florida for a few more days helping the Princess and new baby out, it’s a little cooler here and what the heck, I’m making this!

Am I doing a Whole30? Not necessarily … and neither is Princess or her Hubby which is FINE…this recipe pleases everyone!

Here’s what you need:

2 pounds ground beef (score, I even have marked down grassfed stuff in the freezer!)
1 onion, chopped fine (hubby hates chunky onions)
4 tbs tomato paste (you know to freeze your leftovers in a Ziploc bag and just break off what you need, right?)
3 tbs chili powder
1 tbs garlic powder
2 tbs cumin
1 carton of beef broth
2 14 oz cans of roasted fire roasted tomatoes or just plain diced tomatoes. The fire roasted ones are really worth looking for though, trust me!
generous dash of salt and pepper

In large pot, cook your ground beef and onions til no longer pink.

Drain the excess fat from the pan.

Add the rest of your ingredients and stir well to combine all.

Allow to simmer 45 minutes or so, giving a stir occasionally. Taste and adjust seasonings if necessary.

Dog Sitting

We took care of a puppy over the weekend.

Whee!

Mind you, the cats hate us, even though it’s only a 9 pound Frenchie or whatever he is … all I know is his name is BLUE.

Blue is only 12 weeks old.  I’ve never had a PUPPY before. 53 and I’m babysitting a PUPPY!

The kids are angry. Only because I don’t invite and welcome their dogs (Randi and Matt) or friends (Amanda) with open arms.  They have big dogs. Dogs that terroize the cats. Not sure what Blue will do but the cats are bigger than he is so I’m not overly worried there.

Mark isn’t crazy either.

Well, now he is because BLUE is such a FUN puppy!

And Jamie and Amanda are having a blast with him as well. Amanda has a ‘few’ dogs and she’s got some tricks up her sleeve … including making Blue his very own customized toy!  I’m gonna be sharing that later because I think it’s totally worth sharing.

Friday night, Mark made a lead run for Blue so he could be outside with us while we were in the pool. Blue is small and I don’t think he understands docks, water, falling, etc. just yet so I didn’t want him to have free run of the yard. Imagine explaining THAT to his owner?

Kitten bolted out the door when the kids came home. Big Kitty hid under the bed. Blue slept all night in his crate til 7am. Better than any baby!

All in all, we had a pretty fun weekend dog sitting … not sure how soon we’ll be doing it again though as it was a LOT of hands on playing!

At the end of Sunday night, we were ready to get back into our normal routine and let the real parents take over …
